Dinner menu for April 13th

I can never remember what we eat each week, so I am going to start recording it all here and hopefully not bore you all in the process.

I do a lot of home cooking, but rarely use a recipe. I just do not conform well to a set list of instructions for food that is only going to look good for a moment before being eaten. Not that I don't love eating pretty food. No, not at all. I really do enjoy eating pretty food. I just don't care if mine looks pretty as long as it tastes good.

Anyway... here is tonight's dinner menu.

Lemon Pepper Chicken Strips

6lbs chicken tenderloin strips
olive oil
kosher salt
black pepper
garlic cloves
lemon pepper seasoning

This is how I cooked it:
Preheat oven to 425. Cover baking sheet with foil.
Lightly coat foil-lined baking sheet with olive oil. Sprinkle bottom of baking sheet with kosher salt and then lightly shake lemon pepper seasoning over the bottom also. Place uncooked chicken onto the baking sheet making sure that each piece does not touch. Lightly sprinkle kosher salt and black pepper over the top of the chicken. Place in oven and cook until done. (I never time anything so I have no clue how long I let them cook. Maybe 20-30 minutes??) Remove from oven and place cooked strips into a metal bowl or aluminum pan. Cover bowl or pan with foil and set aside for 10 minutes. Serve and enjoy.

This chicken is also great for freezing to become part of another quick fix meal later. Just cut the chicken into chunks and put into a freezer bag before freezing. Mmmm.

Biscuits

self-rising flour
vegetable shortening
buttermilk

My recipe:
I was out of buttermilk, so I had to substitute whole milk instead. I place a fair amount of flour into a large bowl. Added a glob of shortening. Poured in a bit of milk and mixed with my hand. Added more milk or flour until it was a sticky glob of goo. Floured my hands and rolled the dough, then patted flat before placing onto a greased baking sheet.

This is where the previously lined baking sheets came in handy. I just removed the foil and then greased the pans for the biscuits. Oh, and I used the same temperature as above since the oven was already hot and such. I also made a second batch of the above biscuit recipe when I realized that I only had enough to fill half of a baking sheet.

Not too bad for my first attempt at biscuits in over 5 years. They were a little crumbly, but quite edible. It can only get better from here.

We also had the leftover sweet potatoes, green beans, and Mac & cheese from yesterday with the meal. Oh, and cranberry sauce! Got to have the cranberry sauce with the chicken. Almost everyone came back for seconds! Youngest two never eat so they don't count. ;)
